Buffalo Chicken Casserole

I'm a huge fan of hot sauce, so when I came across this recipe on How Sweet It Is I just had to try it!

Buffalo Chicken Casserole!

What you need:

1 pound pasta
1 lbs Boneless, skinless chicken breast chopped and cooked
1 tsp butter
1 tsp flour
1 1/2 cups milk
3/4 a brick of grated Monterrey Jack cheese
3/4 of a brick grated
3/4 Sharp Cheddar cheese
1/3 cups Franks wing sauce
1/3 cup Panko Bread Crumbs
1 tsp salt & peeper
3/4 cup chopped green onion
1/4 cup cilantro

Directions:
Boil Pasta. While Pasta is cooking in a saucepan over medium heat add butter until bubbly, then whisk in flour. Mix together to create a roux, until golden in color; add milk. Continue to cook over a low heat until the milk thickens. Add grated cheeses leaving some for the topping. Once the cheese is melted add in Franks hot sauce, cooked chicken and add salt & pepper to taste.

In a large greased casserole dish add cooked pasta and blend with cheese mixture - making sure it is thoroughly mixed. Over the top sprinkle additional cheese mix ( I used slices of cheese instead of grated for the topping) and breadcrumbs; bake at 375 degrees for 25 minutes

I admit I am a Pinterest addict, I don't pin nearly as much as a browse those. There are so many amazing ideas I never get bored. It was on Pinterest that I first came across the design for a do-it-yourself clothing rack made from Lasso fittings and other PVC piping. This design made for great use of all the spare parts my husband had laying around in our garage, so I began trying to figure out what else I could create! Who knew you could be so creative with PVC?!

With the summer upon us here in Florida I am always looking for ways to spruce up our yard and Commercial Industrial Supply has just what I need to do so.

With a few PVC pipes, fittings and Duct, I can create a beautiful outdoor Gazebo and even a canopy and not worry about spending a fortune just for the next hurricane to wipe it out. Pipe and canvas canopies are actually quite common, and fairly simple to create and install. Simply anchor a set of "legs" to the ground and link together with a grid of pipe and fittings, and then covered over with a weather-resistant covering like vinyl. I really want to try creating a Gazebo - I have always wanted one. You can design your own PVC gazebo using 3-inch pipe for the main posts and rafters and smaller pipes to form rails and lattice designs. If it sounds confusing you can do a simple search and find plenty of step by step how to's. I am going to using this Gazebo instructional from eHow.

I would also like to design some patio furniture. Between the dogs and my kids, my yard furniture doesn't stand a chance and I am getting really tired of wasting the money just for it to be damaged. If you pay attention most store sell PVC sets for the outdoors anyway, so why not cut the cost and design some myself? I found a few instructional via Pinterest, but I might have to enlist the help of my husband to make sure I have all the right materials.

I am truly amazed with the hundreds of uses for pvc piping. Have you created anything from PVC?

Since the start of the new year we have been making little changes in our diets, we have been trying to eat a bit more healthier and hey, maybe lose some weight as well! We have done fairly well this far into the year but neither my husband or I could give up our sugar and those substitutes usually taste like, well, a substitute.

New Domino Light Sugar and Stevia Blend has only half the calories of regular sugar and to my surprise, tasted just as well. Domino Light Sugar didn't just make for a great addition to our morning coffee replacing are regular Cain sugar, but it was great for baking as well. And with NO artificial sweeteners the kids could get in on the Domino Light goodness.

My kids are pudding junkies so I decided not only to try some pudding from scratch but I was going to replace the sugar with Domino Light Sugar.

What You Need:

1/4 cup + 1 TBSP. Domino Light Sugar

1/4 cup unsweetened cocoa powder

1/4 cup cornstarch

2 cups 1% milk

1 tsp vanilla

Whipped Cream Topping:

1 Cup Heavy cream

2 TBSP Domino Light

1/2 tsp vanilla extract

Directions:

In a small saucepan, whisk together all dry ingredients for pudding. Whisk in milk, 1/2 cup at a time, until combined. Place over medium heat, and continue to whisk until the pudding becomes thick and begins to bubble. Remove from heat and whisk in vanilla. Pour into medium bowl - or individual serving bowls. Place a piece of plastic wrap on the surface to prevent skin from forming - I hate the skin! Chill for at least 2 hours.

Whipped Cream:

In a large bowl, whip cream with an electric mixture on medium speed until soft peaks are just beginning to form. Add Domino Light and vanilla; increase speed slightly until stiff peaks form

It was simply delish! I could not tell the difference in the pudding made from Domino Light as opposed to the usual sugar I bake with.

Can't Live Without My A/C

Summer is upon us here is S. Florida. we are already well into those days, were I refuse to leave the comfort of my A/C. I was told I would adapt, but it's been about 5 years and I'm still always too hot and even the coldest winter days, are never cold enough for us to turn of the central air.

When we purchased our house we had no clue how to care for our air unit. Up north we just stuck a small unit in the bedroom window for the two months it was actually hot and stored it in the basement when the season was over. With a central air unit it didn't take long for us to learn that yearly inspections were a must, along with duct cleaning. A unit not running at the proper efficiency level can be killer on your electric bill - believe me we learned that the hard way!

On a positive note those inspections have really paid off, as twice the inspections have lead to the discovery of a leak. This year we decided to wait for our yearly inspection and just last weekend were left with a flood in our hallway from a clogged drain. Now not only did I have to summon a plumber, but, I will need the ducts cleaned immediately, as the inside of my main flow duct was saturated with water down to the core providing the perfect breeding ground for mold...sigh

Are local A/C repair man is slightly over priced and for some odd reason doesn't provided duct cleaning - I thought that was part of A/C repair, but what do I know. We found it useful to have Scardina Plumbing on our repair list. I hadn't thought of a Plumber for A/C and heating, but why not? They cover everything from installation, inspection and they will even clean my ducts! I simply could not live without my A/C ( dramatic maybe, but true) so it's always a hard lesson learned when something goes wrong with the unit. I'm scared to know what it will cost to replace it when the time comes.

With all the technology available to my kids today, it seems to be a never ending battle getting them outdoors to play. Not only did this trampoline exceed my expectations, but it provides the whole family fun, helps build coordination, balance and stamina; and even has add-ons like a basketball net, tent and so much more. This way we can purchase additional items in the future to keep it fresh, exciting and entertaining for years to come. In fact, I have so much to show and tell you about this amazing trampoline I am going to break this review down into two or three separate reviews. For part one I will start with setup.

The AlleyOop Sports 14" VariableBounce™ Trampoline arrived in a timely matter, in four boxes - note that one box was for the 2-step ladder sold separate. Two of the boxes were very heavy!

I was really worried about how long or complicated setup might be, but the base was pretty simple and assembled in just minutes with no tools required. The poles fit into each other with a interlock type system.

The next step was the springs which took a little more time and finesse. Still, this process took my husband a lot less time then I had anticipated. Only the last four or five springs were hard to attach due to the tight pull.

Next, the reinforced vinyl padding covers the springs with a secure bungee cord system

The large poles which support the safety netting come out of the box encased in white foam. When you attached two poles together the foam fits together covering the entire pole. Once the poles are in place on the trampoline you will cover them with the included vinyl covers, which will protect the foam from the elements while adding eye catching appeal to the trampolines design.

My husband started the netting when I ran to the store, but this seemed to be the most time consuming and caused him a bit of confusion. Once it came together though all the extra steps made for peace of mind for Mom, seeing how secure the netting truly was, as the Variable-Bounce comes with JumpSports strongest safety enclosure, employing their Triple-Fail-Safe™ backup system. The overlapping entry system was new to us and I'll admitt we were confused as to how you get in and out. They have already come along way, I can't wait to show you more next week. I don't know that I am as brave as them, but, if they can teach me any good moves maybe I will step out from behind the camera to give you a good laugh as the kids bounce me all over.

Fundraising 101

The school year is coming to a slow end here and I am already preparing for next year. This year however, I am doing things a bit different by not only preparing my kids for next year with new clothes and School Supplies, but I am learning tips and tricks to help give us a head start with the little stuff that comes up throughout the year.

The new school year will bring with it, new possibilities, more sports, and once again a plethora of fundraising events. I don't mind participating and helping set up school and sport fundraisers, what I dislike is the competition attached with. There is always some amazing prize for a massive to quantity sold that all three of my kids are aiming for! This had me researching online and trying different tactics in real life to see how we could help boost sales for both the organization we were raising money for, along with helping my children meet their personal goals - I guess however that is the secret genius behind the prizes, getting you to work harder to raise more.

When embarking on a fundraiser you want to have a clear cut schedule, The fundraiser will begin on day "A" and end exactly one week later. Think to the future, what is the best way to collect from all those involved, to make sure everything is turned in on the day you've selected? There is nothing worse then having to track down late turn-ins.

You also want to leave yourself plenty of planning time to pull it all together. Are you looking for fundraising ideas for schools, sports, a charity? Whichever it is, determine your market and get the word out, especially if your planning a event as opposed to candy sales and such. If your fundraiser involves sales, remember to be clear with the children involved that they should never go door to door alone. Talk to your local business owners, you'll be surprised at how many will let you setup "shop" right outside. You'll get the benefit of a large reach and the security of a public setting.

When collecting for your organization of course those adorable lil' faces will bring in a percentage of sales from those, like myself, who can't say no to a child. However, I recommended being clear on what your collecting for, what the money is going toward and so on. Yes, I find it hard to say no when a cute smiling face asks me to buy a candy bar, but, I will usually buy more if I am met with a smile and a clear understanding of where my donation will be going.

Brainstorm fundraising ideas, you know your community best. What do you think your organisation could benefit most from? If you will be representing a certain charity learn you facts. If you'll be helping the kids raise money for new team uniforms, or something like a new playground, draw in a bigger crowd with cookie dough fundraising ideas. After all, America certainly has a weakness for sweets - just look at how well those Girls Scouts do ;-)

Remember, your goal. You will get No's don't become discouraged or let your child become discouraged. I can't remember one fundraiser for my kids were the goal wasn't met. It's a great way to teach your children the benefit of hard work, all while benefiting something you support. Oh, and let the kids get creative with signs and posters, there is no reason you can't have fun with it. In fact the more fun you have with it, the better the donations usually are.

ARM & HAMMER Dry Carpet Cleaners Review & Giveaway

What can be worse then beige carpet and 8 muddy paws tracking across it daily? How about 16 muddy paws and 4 spill prone kids! Yes, with the addition of two new puppies are carpets officially stand no chance. If you have been a reader of mine you are probably tired of hearing me complain and are wishing just as much as I am that we get wood floors installed ASAP. Unfortunately, it will be at least another six months...sigh. Until then I must make due.

It seemed simple enough...... I sprinkled the dry powder over the stain, brushed it in and let it sit for at least 30 minutes. Then all I had to do was vacuum it up. For my first test I had to try it on some of those stubborn muddy paw prints, as that is my main stain problem. Being that it was a dry stain I spritzed it with water first, then applied the Arm & Hammer Stubborn stain remover, and let it sit. However a bigger test emerged later that night as are central air unit became clogged and started to leak a murky mess of water onto our carpet. We quickly unclogged the line and I tried my best to suction out the excess water from the carpet, but from previous experiences me and my husband knew the carpet would be left with a nasty water ring. He brought up the idea of sprinkling the stain remover over the area and letting it sit over night - if nothing else we figured it would absorb some water and leave the area smelling fresher.

When I woke-up I seen the brownish yellow ring seeping through the white of the stain remover, I shrugged to my husband and said it was worth a shot. As I started to vacuum up the powdered stain remover, I realized the stain I seen was soaked into the powder, not my rug! As I sucked up the stain remover the stain disappeared with it. This alone made me a huge fan of this product. It saved a pretty decent sized area of my carpet and for that I will be forever grateful.

Chicken Cordon Bleu Casserole

What you need:

2 teaspoons butter

2 teaspoons all purpose flour

2 1/2 cups milk

salt & pepper to taste

2 cups or 1 bag shredded Italian blend cheese

1 1/2 boxes Campanelle pasta

1 pound chicken, cooked and chopped
2 tablespoons extra virgin olive oil

2 cloves garlic, minced

chopped deli ham (thin sliced)

frozen chopped spinach, thawed and drained well

Topping:

1/4 cup seasoned bread crumbs

1/4 cup grated Parmesan cheese

2 teaspoons extra virgin olive oil

Preheat oven to 350 degrees.

Start preparing your pasta. Meanwhile, melt the butter in a large saucepan on medium heat and add the flour. Stir until combined and bubbly, at least one minute. Slowly add in the milk, whisking in. Add salt & pepper to taste. Add Italian cheeses and stir until cheese is melted and well-combined.

Heat the 2 tablespoons of olive oil in a sauté pan and add the garlic. Stir for one minute until fragrant. Add the cooked chopped chicken and salt and pepper to taste. Sauté for a few minutes. Add pasta, chicken, sliced ham, and drained spinach to the cheese mixture. Stir until well-combined and place in a greased 2-quart casserole dish.

Stir together the bread crumbs, Parmesan cheese and 2 teaspoons of olive oil. Sprinkle the mixture on top of the pasta dish and bake uncovered for 15–20 minutes, or until golden brown on top.

The were quite wrinkled, but after being pressed well they looked great and I couldn't find one loose thread.
