Red, White and Blueberry Muffins #Recipe

Now that we've settled in with baby, I'm slowly getting back in the kitchen for more than just our main meals. The kids have really been missing the baked goods and with the passing of Memorial Day and 4th of July coming up I decided to make them a patriotic treat.

Ingredients:
  • 1 1/2 cups of flour, 
  • 1/3 cup of sugar,
  • 1/4 cup of white chocolate morsels, 
  • 1 1/2 tsp baking powder, 
  • 1 cup milk,
  • 1/3 vegetable oil,
  • 2 eggs,
  • A handful of blueberries (never really measured it out) I try to use the smallest ones in the bunch
  • About 4 large strawberries diced.


Directions: 

Preheat oven to 375 degrees

In large mixing bowl combine flour, sugar and baking soda. Slowly blend in eggs, milk and oil. Once your batter is smooth, stir in white chocolate, and fruit.

In a greased of lined muffin pan, pour 3/4 cup batter into each "cup"; place in oven for 15-18 minutes or until a toothpick inserted comes out clean. They should be golden on top, but not dark golden. You don't want to overcook them.

Great recipe. I love blueberries in muffins but had never thought about putting strawberries in muffins before. This is a great idea for the 4th of July festivities.
