Chicken & White Bean Soup #Recipe


Ingredients:

  • 2 ½ cups shredded chicken (I use shredded rotisserie chicken)
  • 64ozs chicken broth
  • ¼ cup water
  • 2 cans cannellini beans
  • ½ small onion chopped
  • 2 (1oz) packages taco seasoning
  • dash of red pepper flakes
  • fresh cilantro as desired
  • sour cream (optional)
Directions:
  1. On stove over medium/high heat add broth and water to a large (4qt) soup pot. Stir in seasoning mix until blended; add chicken and onion.
  2. Drain and rinse beans pouring half into your soup pot. Take the remaining half of beans and puree (if you don’t have a food processor or blender you can just mash them up some by hand) add to soup.
  3. Bringing soup to a boil, adding cilantro and red pepper flakes. Simmer on low for about 30 minutes.
  4. Serve topped with grated cheese and sour cream, both optional.
This is one of those simple soups that taste delcious, yet doesn’t require too much time or a great deal of effort on those rushed nights.

This looks good to me! I love adding the beans to pump up the protein in this. I had thought we were done with winter - but they are talking about MORE snow, so it's time to make the soup! Just personal preference, I'd leave off the cilantro, I can't stand the stuff. (Ever notice cilantro is a love/hate type of thing - no middle ground?)
