Pulled BBQ Chicken & Bacon Sliders #Recipe

My family has been begging me to make my Buffalo Chicken Sliders for over a month. The problem was, my crockpot broke and after 6 trips to the supermarket I just couldn’t seem to remember to pick up all the ingredients, so I decided to indulge them in something a bit milder, but still quite delicious.

Pulled BBQ and Bacon Chicken Sliders with Cheddar Cheese

Pulled BBQ Chicken with Bacon Sliders #Recipe
Ingredients: 
  • 2 or 3 large bone-less skinless thick cut chicken breasts
  • 2 tsps. Vegetable oil 
  • 1 tbsp. Apple Cider vinegar
  • 2 green bell peppers, chopped
  • 1 red onion, chopped
  • 3 cloves garlic, minced
  • 1 1/2 cup barbecue sauce
  • 2/3 cup water
  • 1 cup shredded cheddar cheese
  • 1lb cooked bacon
  • 1 package slider-sized buns of choice

Directions:

Coat the bottom of a large sauce pan with vegetable oil. Add your peppers, onion and garlic sautéing over medium heat for 2 to 3 minutes. Add chicken, barbecue sauce, vinegar and water; cover and cook on medium/low heat for about 30 minutes making sure your chicken is cooked through - watch your sauce you don’t want it to burn. Remove chicken from sauce; shred with fork. Return shredded chicken to the pan and coat with sauce.

Heat oven to 375. Place buns on a cookie sheet; add cheese, evenly to the top half of each bun, place in the oven for about 5 minutes until cheese is melted. Remove; add chicken in sauce, top with bacon and serve

This looks good - I would just make it a tiny bit more healthy by leaving off the bacon. :)
