Cheesy Turkey & Veggie Casserole #Recipe and Giveaway #CountryCrockCasserole

I feel like it’s already been such a long holiday season with most of my time spent in the kitchen. I’ve been completely burnt since Thanksgiving and trying to prepare myself to do it all over again in just a few short weeks. I’ve been trying to keep our meals simple the last few weeks and utilize leftovers without the kids or hubby getting bored of the same old stuff.

As part of my collaboration with Country Crock this month I was inspired to create a vegetable casserole of sorts. With Thanksgiving just barely behind us and Christmas sneaking up I wanted a casserole that I could change-up a bit depending on what’s leftover in the fridge. This Cheesy Turkey Veggie Casserole will taste just as great no matter the filling. Try turkey after Thanksgiving, ham after Christmas, or chicken after any meal.

Ingredients:

  • 1 cup cooked cubed/shredded turkey *substitute with ham or chicken 
  • 1 1/2 cup dry rotini pasta, cooked and drained
  • 1 can condensed cheddar soup
  • 2 bags frozen mixed vegetables * fresh veggies may be substituted
  • 2 cups shredded cheddar cheese
  • 1 cup Panko bread crumbs
  • 2 tbsp County Crock Spread
      Directions:

      Cook your vegetables according to packaging; drain into large bowl adding butter while still warm.

      Add cheddar soup and meat, mixing together.

      Spread your mixture into a casserole dish, topping with shredded cheddar cheese and breadcrumbs.



      Bake at 375 for 20-30 minutes or until golden and cheese is melted.

      Simple and easy this busy holiday season!
