Baking with M&M's: M&M Filled Rainbow Cake #Recipe & Sweepstake #BakingIdeas #Shop



With my children getting older, it seems we're often each going in our own direction and it’s always been important to me to make sure we find some family time within our busy schedules. For us, this is usually Friday night family time consisting of a little baking in the kitchen and a movie to follow.

This month with the holidays on my tail and an overload of Thanksgiving cooking, I admit I’m a bit burnt out. My love of baking and creating has nearly disappeared and I’ve been slacking in the kitchen big time. This weekend I decided to let the kids pick something to make that they would not only enjoy, but could really get hands-on with - making it fun for them and less stressful for me.

When I headed out to do some grocery shopping at our local Walmart Friday morning, I picked up a variety of movie snacks including our favorite plain M&M’s.



It was at that time when I realized I had the perfect treat for us to whip up that evening. M&M filled rainbow cake! What kid doesn’t love not just making, but eating cake? And adding M&M’s to the mix only sweetened the deal even further! We started our creation by making white cake.

Ingredients:
  • 2 1/4 cups cake flour 
  • 1 cup milk 
  • 6 egg whites 
  • 2 teaspoons vanilla extract 
  • 1 3/4 cups granulated sugar 
  • 4 teaspoons baking powder 
  • 1 teaspoon salt 
  • 1 1/2 sticks unsalted butter, softened 
  • Food coloring 
  • Frosting of choice
Directions:
Heat oven to 350 degrees.
Grease two 8-inch cake pans and an 8-inch angel food cake pan
Blend milk, eggs and vanilla in a medium bowl.
Beat together on low: flour, sugar, baking powder, and salt, slowly adding in butter. Beat for about 2 minutes.
Slowly begin mixing the milk mixture into the flour mix; blend on high an additional 2 minutes, until smooth.
Separate batter into 3 bowls. Your cake layers will be thinner than traditionally. In each batch add a few drops of food coloring, mixing together. You can use drops or gel and can certainly alternate colors anyway you’d like.
Pour each bowl of batter evenly into their designated prepared cake pans.
Bake about 30 minutes or until toothpick inserted in the center comes out clean.
Allow cake to cool to room temperature.
Decorating:

Once cake has cooled remove from pan, placing down the first layer: add a coating of frosting on top placing down the second layer, which should be the layer you made using the angel food cake pan.

You’ll note you know have a nice hole in the center of your cake to fill with your favorite M&M’s! Fill the whole with M&Ms and coat the layer of cake around the whole with your favorite frosting. Place your last layer of cake on top and frost cake completely.

It’s been awhile since we’ve made this and my kids were over the moon. What I really love about this is how many ways it can be altered from the filling and cake type to making it festive. For example, you can use holiday M&M’s and green and red layers for a Christmas treat. For those patriotic holidays try red, white and blue layers with a red, white and blue M&M filled center!

This cake looks amazing! I like that it has M&M's in it because it is my favorite candy. I like the color of this cake and it sure looks yummy and so pretty. I would use the Christmas colors of M&M's to make this cake for the Holidays!
