It’s not often my husband and I find ourselves home alone, but when we do I prefer to prepare something simple. Actually, real simple, like something I can pop in the oven for a few minutes with minimal prep work or even toss in the microwave. Same applies for when the kids are home from school, it’s been a busy day, and their in need of something to tide them over.
Old El Paso now has the perfect entrée option for that dinner for two night or a mid-day snack. Chef Jonathan of Old El Paso traveled to Mexico to bring back authentic flavors and recipes that are now available to you as delicious frozen meals for two.
Since Mexican is my husband’s favorite I gave him the honor of picking out our first Old El Paso flavored entrée and he chose chicken quesadillas.
Prepared in just minutes each quesadilla was loaded with white meat chicken, veggies, melting cheeses and traditional Mexican flavors you’d expect in a quesadilla. I was worried they might be too soggy coming out of the microwave, but that wasn’t the case. From the microwave, and prepared as directed, they were actually still firm on the outside like a quesadilla should be.
