Sponsored: Chicken Tacos with Grape Juice Salsa #Recipe #ShareWhatsGood with Welch's #MC

"I participated in a campaign on behalf of Mom Central Consulting for Welch's. I received product samples to facilitate my review, and a promotional item as a thank you for participating.”"

For years Welch’s has been helping generations of families, enjoy the magic of kitchen table moments. In my family, I often find they we are off doing our own thing for a large part of the day. Even after arriving home from work and school everyone seems to want a little time to themselves to relax and unwind. And that is OK with me, because I know come dinner time we all have a date at the kitchen table to enjoy good food and open up about our adventures of the day.

Making a point to sit down at the table together at least once a day really opens up much needed time for those special moments. And for us, the table is not only for sharing, but enjoying the good foods that help bring us together – and it’s always a bonus when it’s a meal we all enjoy.

This week we brought our own magic to the table enjoying slow cooked shredded chicken tacos smothered in a grape salsa, made possible with Welch’s Grape Juice.

Slow Cooker Chicken Tacos with Grape Juice Salsa #recipe #ShareWhatsGood #Sponsored #MC

Ingredients:
  • 1 lbs. boneless, skinless chicken breast
  • 2 packages taco seasoning
  • 1 package ranch dressing mix
  • 1 cup water
  • 1 can ( 8 oz.) chicken broth
  • flour tortillas
Sauce:
  • ¾ cup low-sodium salsa
  • ¾ cup Welch's 100% Grape Juice
  • ½ tsp. ground cumin
  • Juice of 1 lime
Directions:
In your slow cooker add water, broth, 1 package taco seasoning, and ranch mix; stir together. Place in your chicken breast, cover and cook on low 6-8 hours. About an hour before you’re ready to serve, open your slow cooker, shred chicken with fork, and add the additional package of taco seasoning; mix together, continue to cook.

Just before serving time, in a small saucepan stir together salsa, grape juice and cumin. Heat on medium – low until warm; remove from heat. Add lime juice and stir to incorporate.

Serve tacos with your choice of toppings (lettuce, tomato, sour cream, etc.) spoon grape juice salsa over the top and enjoy your own kitchen table magic.

Welch’s believes (as do I) that in the time it takes to drink a glass of juice or share a sandwich, a special moment can happen.  Welch’s has just launched a new movement that helps families share their special moments. The “Share what’s Good” campaign embraces all the special moments in your life whether at the kitchen table or on the go. While I love the moments we spend together each an every evening at the table, some of my very best family moments have happened while on vacation or simply just enjoying the sites around town.

This recipe definitely has the makings to be a great recipe - grape juice, salsa, chicken, slow-cooker. It's definitely going on the menu this week. :)
