Autumn Apple Cobble #Recipe

Autumn Cobbler #Recipe


Ingredients:
  • 1/2 cup sugar
  • 2 1/3 cup water, divided
  • 1 tsp. ground cinnamon
  • 1/3 tsp. salt
  • 1/2 tsp. nutmeg
  • 6-8 large apples, peeled and sliced
  • 1 cup dried apricots, sliced in half
  • 1 1/2 tbsp. lemon juice
  • 3 tablespoons cornstarch
Topping:
  • 2 cups Bisquick® mix
  • 3/4 cup milk
  • sugar
  • lemon zest
Optional:
  • whipped cream
  • vanilla ice cream

Directions:
In large saucepan combine first four ingredients, using only 2 cups of water. Bring to a boil over medium/high heat. Stir in lemon juice, apples and apricots. Return to a boil; reduce heat and simmer for an additional 10-15 minutes.

Meanwhile, combine cornstarch and remaining 1/3 cups water until smooth. Stir into apple mixture, boiling until thickened. Transfer mixture into baking dish.

In a medium sized bowl combine Bisquick and milk; blend together. Drop spoonfuls onto warm apple mixture, sprinkle with sugar and lemon zest. Bake at 375 for 20 minutes or until golden brown. Serve warm, topped with your choice of whipped cream of vanilla ice cream and a dusting of cinnamon.
