Back to school brings big changes to my routine. My days will become shorter, nights longer, and a big portion of my time will be consumed helping my kids with school related activities and projects. This means as much as I actually enjoy cooking, I simply no longer will have the time for anything too complicated. I need easy meals. My homemade pizza will be replaced with the occasional frozen variety, vegetables will be frozen more frequently and sauce will come from a jar. Actually, It was jarred sauce I was picking up during my last trip to Walmart when I noticed Kraft Recipe Makers on the shelf.
My family loves my chicken and steak fajitas, but I have to admit they're a bit time consuming – a dish I often don’t have time for when we're back to school. I wondered if I could simplify my recipe and cut the prep work down using just a box of Kraft Recipe Makers: Tex-Mex Chicken Fajita. As it turned out, I was able to recreate our favorite dish for dinner tonight and in just 30 minutes.
What you need:
- 1 pound skinless, boneless chicken breast halves, cut into strips
- 2 red bell peppers, cut into strips
- 1 large onion, sliced
- 1 box Kraft Recipe Makers: Tex-Mex Chicken Fajita
- 4 cups cooked brown rice (boil in the bag works well in a hurry)
- 1 cup water
- 1 cup shredded cheddar cheese, plus more for serving (optional)
- Flour tortillas
- Sour cream (optional)
Instead of, or combined with chicken, you can also use skirt or flank steak, fat trimmed and cut into strips.
Preheat oven to 350.
Heat a large skillet over medium-high heat, and coat with cooking spray. Add the chicken, onions, peppers, simmer sauce and an equal amount of water; cook and stir until the chicken is no longer pink and vegetables are tender.
Spoon equal parts rice and chicken mixture down the center of each tortilla; add cheese, sour cream and any additional toppings of your choice. I typically, just set out bowls and let everyone create their own fajitas, since I prefer my rice on the side and we all have toppings we prefer.
Kraft Recipe Makers allowed me easy-prep with that homemade feel. The box provided me the base ingredients I needed to get me started on family meal everyone loved! This is a meal I usually start the day before (leaving time for marinating) and with the help of this meal kit we were eating in under an hour. In this house we call that a success! Oh, and did I mention that not an ounce of flavor was missing? These fajitas were beyond yummy!
