BLT Roll-Up #Recipe from Best Lunch Box Ever (Review and G|veaway)

The days of a simple sandwich for lunch seem to be long gone. Now not only are kids demanding more of a variety, but parents realize the importance of a well-balanced lunch; as a well-balanced lunch helps kids focus in class by energizing their mind and body. Where the problem lies, for me at least, is packing a lunch my kids will actually eat. I hate seeing their lunch box half full when they return home from school followed by the mumbles “I don’t really like that” or “I ate that yesterday.”  This year however, I’m armed with some backup!

Food writer and registered dietitian Katie Morford has been providing answers to parents on how to feed their families for years. Just in time for back to school, Katie tackles the dreaded question "What's for Lunch?" with the invaluable cookbook/handbook/life-saver Best Lunch Box Ever: Ideas and Recipes for School Lunches Kids Will Love.

I love his book as it contains 75 simple made-from-scratch options from snacks to a main lunch course and everything in-between. You know what the keyword in that sentence was for me right? Simple!! All the recipes can be thrown together that morning or prepared the night before. Katie also supplies nutritional advice, advice on keeping school lunches at safe temperatures, and so much more.

Since we head back-to-school on Monday I decided I should start getting in the swing of things again and prepared two easy recipes from “Best Lunch Box Ever” for lunch this afternoon as an example to share with you all.


BLT Roll-Ups and kid-pleaser Chicken Caesar Salad – both recipes can be found in the book.


BLT Roll-Ups with Avocado

Ingredients:

Serving size: 2 roll-ups

4 slices of bacon, cooked
2 tsp. mayo
2 8-inch whole-wheat flour tortillas
2 large leaves of lettuce
2 slices of tomato
1/2 large ripe avocado, thinly sliced
pinch of salt

Spread the mayonnaise in a 1-inch-wide strip down the center of each tortilla. Lay the lettuce over the mayo, followed by the avocado. Cut each tomato slice into three strips and lay those over the avocado and sprinkle each with salt. Top each tortilla with two slices of cooked bacon.

Roll the ingredients up in each tortilla to form a light bundle. Cut-in half. 

*I added cheese to my roll-ups at my daughters request.

Of course preparing bacon in the morning isn't convenient, so you can prepare it the night before and make the wrap in the morning or use any left over bacon you might have from a previous meal/breakfast. You'll also want to note the importance of wrapping the tomato and avocado in the lettuce so the tortilla doesn't get soggy inside the lunch box.

As a side I also made Chicken Caesar salad; a simple blend of fresh romaine lettuce, shredded chicken, croutons and grated Parmesan cheese tossed in home-made dressing.
