Peanut Butter Passion Cake #Recipe



My husband’s birthday was just last week and I was stuck on what to do for him as far as a cake went. See he isn’t a big dessert type of guy, in fact he really doesn’t even like cake. The only thing I do know he enjoys is chocolate and peanut butter. So for the past 13 years or so, I've tried to come up with a new “peanut buttery” ways to celebrate including birthday pies, cakes and even brownies. This year, however, I was stumped! And a little less than motivated.

The day before his actual birthday I found myself browsing Pinterest (I spend way too much time there) and this cake seemed to literally jump off the screen at me, as not just delicious looking, but different from the peanut butter creations I have come up with over the years - it had peanut butter cookie dough center! I knew I didn’t have time on my side nor did I have all the ingredients I needed, but I wasn’t going to give in. I decided to do my best to adapt this amazing recipe found at the Picky Palate and create something the hubby had to love. I even added peanut butter drizzle for an add burst of deliciousness!


Peanut Butter Passion Cake

  • 2 Boxes Chocolate Cake Mix
  • Reese's Peanut Butter Cups, optional

Dough

  • 4 tablespoons unsalted butter
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 cup all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 1/4 cup milk
Chocolate Frosting
  • 5-1/2 cups confectioners' sugar
  • 3/4 cup unsweetened cocoa powder
  • 3/4 cup butter
  • 1/2 cup and 2 tablespoons evaporated milk
  • 2 teaspoons vanilla extract

Peanut Butter Drizzle
  • 1/2 cup creamy peanut butter
  • 1/2 cup light corn syrup
  • 1/4 cup heavy cream
  • ¼ tsp salt 
  • 1 teaspoon vanilla extract
  • 1 teaspoon granulated sugar
  • Piping bag, optional

Cake

Bake cake according to package directions separating batter into two well-greased, 9 in cake pans. Once done, cool completely. Gently remove from pan(s.)

Peanut Butter Dough Filling

Beat together butter and peanut butter until creamy. Mix in sugars, vanilla, flour and the milk until you have a thick dough like consistency.

Frost the center of your cake, stacking the second cake on top of your peanut butter dough center.

Frosting

In a large bowl, beat butter until smooth, gradually adding in confectioners' sugar, cocoa, and evaporated milk. Blend in vanilla, beating until light and fluffy.

Frost your cake completely, sealing in your filling. If desired add Reese Peanut Butter Cup in any fashion you'd like. I used a combination of minis and full sized cups.

Peanut Butter Drizzle

In a small saucepan, over medium heat, whisk together peanut butter, corn syrup, heavy cream and sugar until fully combined. Remove from heat and stir in vanilla. 

Please note the mixture is hot making piping the drizzle over the cake a little difficult. If you find it too hot to work with simply drizzle the peanut butter over the top using a spoon. Let set and serve.
