Slow Cooker Shredded Chicken in a Sesame Sauce #Recipe

During the summer months the grill and crock-pot become my best friends. Since the kids can eat chicken every day of the year, I often find myself converting some of my favorite stovetop and or oven chicken dishes into a slow cooked meal to keep things from getting boring. This is a favorite...

Shredded Sesame Chicken

Ingredients:

  • 6 boneless, skinless chicken thighs
  • 3/4 cup honey
  • 1/2 cup ketchup
  • 1/2 cup low-sodium soy sauce
  • 1 tsp. sesame oil
  • 2 garlic cloves, minced
  • 1 small red onion, chopped
  • 1/2 cup brown sugar
  • 1 tablespoon toasted sesame seeds
 Optional:
  • Green onions, chopped
  • 3 tsp. flour

Directions:

Combine in slow cooker honey, ketchup, sugar, oil, soy sauce, onion and garlic; stir together. Add chicken cooking on low for 4-5 hours.


Remove chicken from slow cooker; shred chicken.


Stir flour into slow cooker sauce, if desired, to thicken; continue to cook on high for an additional 5 minutes.

Place chicken over white rice, top with sauce, toasted sesame seeds and green onions.

This is not something I would EVER have thought of, but it sounds so delicious that I promise you I will be making this weekend. It is supposed to be super hot here again so I love my crock pot too. I have so been looking for a sesame chicken recipe that called out for dark meat. I am excited to try this recipe. I think I will not shred the chicken though. Just cut it into a little smaller pieces. Otherwise the whole thing sounds yummy and I can't wait to make it.

Now THIS sounds great! I love the Asian flavors in this. Also, there's really very little prep time and the crock pot does all the work. I would just serve it over quinoa rather than rice (personal preference). Thanks!
