Lemon Flavored Cupcakes

Lemon Cupcakes and Frosting


I don't know what it is about summer and lemon cupcakes, but since I was a little girl nothing said summer like that fist barbeque and a plate of Mom’s Lemon Cupcakes for dessert. I hope you enjoy them as much as I do! 

Ingredients:
  • 1 1/2 cups all-purpose flour
  • 1 1/4 tsps. baking powder
  • 1/3 teaspoon salt
  • 1 stick unsalted butter, softened
  • 1 tbsp. lemon zest, grated fine
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1/2 cup milk

Frosting:
  • 1/2 cup butter
  • 3 cups confectioners' sugar
  •  1 1/2 tablespoons lemon juice
  • 2 tsps. Finely grated lemon zest
  •  1/2 teaspoon vanilla extract

Directions:

Heat oven to 350°

In a bowl, whisk together flour, lemon zest, baking powder, and salt; set aside.
With mixer, beat together butter and sugar on medium-high until fluffy. Add in the eggs, one at a time, then the vanilla. Beat an additional 2 minutes.

Add the flour mixture and milk slowly. Mix on low just until combined.

Divide the batter into muffin cups. Bake at 350 for about 15-10 minutes, or until toothpick inserted in the center comes out clean. Cool.

Frosting:

With a mixer, beat the butter and sugar on medium-high until light and fluffy,3 minutes. Beat in the lemon zest, juice, and vanilla. Frost and serve.

For a yellowish tint, simply add a small amount of yellow food coloring.

If double the lemon isn't your cup of tea, there is a wide variety of frosting flavors that go well with lemon cake. I just can't get enough lemon!

What a great recipe for the summer and you made these look SO good. This is crazy but I've never ever had a lemon cupcake before. Maybe it's time I try one.

Homemade is the only way to go when making cake and cupcakes! This frosting looks so delicious. I like the Cupcakes and plan on making these for summer parties!
