Sausage Soup #Recipe

#Recipe for Sausage Soup


Ingredients:
  • 1 lb. Italian sausage, casing removed
  • 1 1/2 cups white rice
  • 1 can (14 ounces) diced tomatoes
  • 1 cup chopped frozen spinach, thawed and drained
  • 4 (14 ounce) cans beef broth
  • 1 garlic clove, mince
  • Salt & Pepper (to taste)
  • Parmesan cheese, shredded


Directions:

Brown ground sausage in a soup pot breaking up the meat as it cooks; add garlic cooking an additional 2 minutes on a medium heat.

Once your meat is cooked through, stir in broth, rice, and un-drained tomatoes; season with salt and pepper. Cook for about 15 minutes over a medium heat, or until your rice is tender, add spinach and simmer for an additional 5 – 10 minutes.



Serve garnished with Parmesan.

I have never heard of sausage being used in soup. My daughter would love this. Her uncle gets her Italian Sausage from a local butcher, freezes it and brings it to her when he visits.

It's hard to believe that such a delicious and hearty looking soup can be made with so few ingredients. That is what I love about this recipe. Some soups have so many ingredients that I don't bother! This is one I will.

Love soup! Even in the summertime, especially with Italian sausage and spinach. I'm thinking the meat could be cooked, then everything thrown into the slow cooker for the rest of the day.

I'm going to try this, I actually have some chipolte sausage...Walmart is going to discontinue it and I like it. I am a bit tired of sausage with red beans & rice.

This looks very good and hearty for the cold weather. I'd use Sweet Italian sausage for this. I also like the spinach in it, I think that gives it a nice kick. Great one!
