Smart Eating this Summer - Grilled Chicken Pockets #Recipe #GrilledandReady #Cbias #ad


The temperature is rising here every day and the kids are beyond ready for school to break for the summer. While I love the warmer temps, sunny skies, and heading out to the beach, my biggest summer dreads is something I typically really enjoy ... cooking!

It seems everyone becomes harder to please in the summer months. Nobody wants a heavy meal after working, playing, or simply lounging around in the heat all day. And on top of wanting a light meal, they want a fit and healthy option for watching that summer figure. While I've come up with a few options to please my family over the years, one of the newest additions to our summer menu is Grilled Chicken Pockets with a yogurt based dressing.

These pockets are made easy using Tyson Grilled and Ready chicken which can be found at your local Walmart. This versatile chicken is loaded with flavor, 98% fat free, contains no preservatives, and since it’s fully cooked, all I have to do for this meal is heat it quick in a skillet, adding 2 tbsps. of lemon juice.

To complete your Grilled Chicken Pockets, besides Tyson Grilled and Ready chicken strips, you'll need the following:
  • 1 large purple onion, cut into thin rings
  • Whole Grain Pocket Thins
  • 1/2 head romaine lettuce, chopped
  • 1 (10.6-ounce) jar black olives, sliced
  • Turkey bacon, cooked and crumbled
  • Fresh tomatoes, sliced
  • 1 cup crumbled feta cheese
Yogurt Dressing:
  • 1 cup unflavored yogurt
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
For your dressing simply combine all the ingredients in a small bowl and whisk together.  Spread dressing over the inside of your pocket; add 3 grilled chicken strips to each side of the pocket bread.

Stuff your pocket bread to taste with remaining ingredients: onion, lettuce, tomatoes, olives and bacon, topping it off with a little crumbled Feta cheese.

These are so simple, yet they pack so much flavor using lots of fresh, healthy, ingredients. And as an added bonus (for me at least) when we are done eating, I’m able to save any unused chicken for a grilled chicken salad or a “pocket” later in the evening. Remember  Tyson Grilled and Ready chicken is precooked, so my leftovers will require no additional prep work, now that they have been thawed, when I’m ready to use them again.

These look amazing! I bet they taste pretty darn good as well. We use the Tyson whole chicken breast. I haven't tried the grilled version but I would think it was just as good.

I would rather use pockets or soft tortilla shells instead of bread a lot of times. These look yummy. Make them to suit yourself. The grilled chicken really sets them off. thanks for the recipe and info.
