Fresh sweet corn, there is nothing like it, especially if you ask my kids. It one of just a few vegetables (corn that is harvested fresh is a vegetable) that they truly look forward to and enjoy fresh. For me corn is a truly versatile food which adds color, flavor and texture to some of my favorite dishes. I literally have an arsenal of fresh corn recipes each one as tasty as the next. However, fresh corn (especially locally, Florida grown, Sunshine Sweet Corn) also represents for me, sun, warmth, and beautiful weather. Because I know when that fresh corn rolls into my local market that can only mean that spring has sprung here in S. Florida.

I was excited to see endless amounts of fresh corn at my market this week, and was sure to grab a few ears. My next question was what I would be using the corn for? There had been so many recipes in my mind over the past few months that had been missing one key ingredient, fresh corn. Personally, I was dying for some corn and black bean salad, but my husband and kids had their own request.

As I said it wouldn’t be spring for us without fresh corn and what better way to celebrate the beautiful weather we’ve been having then with a cookout. And what’s a cookout without grilled corn? Or better yet grilled corn with a kick!

Ingredients:
  • 1/2 cup butter, softened (1 stick)
  • 1-2 Chipotle pepper in adobo, chopped
  • ½ tsp. salt
  • 4 large ears of corn, husked
  • feta cheese

Directions:

Pull all the husks off of the corn and discard. Remove silk on the corn and discard. Place the whole cobs in a pot of cold water for approximately 20 minutes. Be sure the ears are completely covered with water.

While corn is soaking you can prepare your butter by combining the butter, Chipotles in adobo and salt in food processor and mixing well.

Preheat the Barbecue grill to a medium temperature (350 degrees F). Remove the corn from the water and shake off any excess water.

Place ears of corn diagonally in the center of a square of aluminum foil. Add soften chipotle butter mix, brushed onto corn. Roll the aluminum foil around each ear of corn and close it up by twisting the ends.

Place the prepare ears of corn grill, rotating the corn every so often. Allow the corn to slowly continue cooking for about 15 to 20 minutes. Don’t overcook the corn or it will become mushy.

Remove the corn from the grill. Be careful it’s hot!! Serve sprinkled with Feta cheese and an extra dollop of chipotle butter for kick.

We love a little kick to our corn and grilled corn is an absolute must in our house. My kids could eat grilled corn every night of the week. In fact, I have to go back and buy more corn because they had my husband grill them up the corn I had put away for my corn and black bean salad.

There really is nothing better then fresh sweet corn. My daughter loves when I make it for dinner. Sometimes that is all we will have is just the corn. We don't usually grill it though, so I can't wait to try your recipe. Thanks for sharing!
