Chicken and Orzo Soup #Recipe

I very rarely find a meal all  my kids can agree upon unless it's a soup or a stew. It doesn't even matter what is in it, if it's called soup or stew they'll eat it, enjoying it down to the last drop. As happy as it makes me to see them all enjoy something, the same old soups week after week have become quite boring to my husband and I. This is a tasty soup variation I adapted from a recipe I found on Cooking Light


Chicken and Orzo Soup - #Soup #Recipes


What you need:
  • 2 cups shredded or chopped chicken, cooked
  • 2 bacon slices, chopped
  • 1/2 onion, chopped
  • 1 garlic clove, minced
  • 1 can finely diced tomatoes, drained
  • 2 tablespoons oregano
  • 2 cups water
  • 2 cups chicken broth
  • 2/3 cup uncooked orzo
  • 1 can cannellini beans, rinsed and drained
  • Chopped, flat-leaf parsley
  • 1 tablespoon white wine vinegar
  • Salt & pepper

Directions:

Cook bacon, until crisp. Remove bacon from pan, reserving drippings in pan; set bacon aside.
Add chicken to drippings in pan and sauté for about 5 minutes. Remove chicken from pan. Add onion and garlic to pan; sauté 3 minutes or until tender. Add tomato, oregano, salt and pepper, stirring constantly.  Add bacon and chicken back to pot. Stir in water and broth; bring to a boil. Add beans and orzo, cooking until al dente.Remove from heat; stir vinegar, and salt. 

Garnish with parsley and serve immediately.

Wow this sounds really good. By the time spring rolls around I am tired of the same old soups also. I am sure the bacon gives it a little boost of flavor. I can't wait to try it.

i love getting my veggies in soups but hubby refuses to eat soup at all so i freeze the extra in mason jars to thaw and reheat later for lunches

I haven't had a homemade soup in awhile now and this soup looks and sounds great. I'll bet that bacon really adds some flavor too. Yummy!

This is such a delicious and healthy recipe with Chicken. I will have to look up what orzo is because I do not think I have ever had it. I like that there is bacon and garlic in this recipe because it really gives it great flavor!

Would you believe Ihave never used orzo and this recipe and today's chilly weather have convinced me to try it. It sounds delicious with bacon and tomatoes which are not the usual ingredients in chicken soup. Thanks for sharing

Sounds yummy! A bit of a twist on my version that doesn't have tomatoes and uses lemon juice instead of the vinegar but I will sure give it a try for my hubby!
