Somehow Easter has managed to sneak up on me. I try to make a special treat for the kids with each passing holiday. It wasn’t until last night, when my littlest mention we hadn’t made any Easter treats that I realized Easter was only a week away. So with limited baking supplies in my pantry we got to work creating something fun for them to enjoy, simple Easter themed vanilla cupcakes.
What you need:
- 12 Nilla wafers
- 1 box yellow cake mix
- Jelly beans
- Sweetened bakers coconut
- Wilton green food coloring spray
Preheat oven to 350
Place a wafer at the bottom of each cupcake wrapper; prepare cake mix according to packaging.
Fill paper-lined muffin cups with about 1/3 cup batter as not to overflow when baking, leaving room for coconut “grass.” Bake for about 18-20 until done.
Cool; top with coconut. Spray coconut with green food coloring spray add jelly beans and serve.
You’ll have a fun Easter themed cupcake without a ton of work!
