Southwest Three Cheese Stuffed Peppers #Recipe #KraftFreshTake

One fun fact about me, as you might have picked up over the years, I love to cook. Unfortunately, after four kids time isn’t always on my side. You may have noted I try to focus on meals and products that allow me to still get creative in the kitchen, but with less mess or prep work. When I was asked to participate in Kraft Foods, Fresh Take Flavor Makers program, focusing on using one of their newest products, Kraft Fresh Take, which makes cooking easier by combining two fresh ingredients in one convenient package. I was excited to see how it would make things simpler in my kitchen.

If you haven’t heard of the product, Kraft Fresh Take combines fresh natural cheeses and expertly seasoned breadcrumbs to use with your favorites like chicken, pork, fish and more. As part of the Fresh Take Flavor Makers program I was given a Kraft Fresh Take variety and challenged to create two flavorful meals and share my experience. Of course Kraft doesn’t want to leave my readers out. My Kraft Fresh Take "Creation"

I was given the Kraft Fresh Take variety of Southwest Three Cheese. With it I will be creating two southwest inspired recipes using the Fresh Take Southwest Three Cheese variety as an ingredient and have been supplied with two challenge cards as a guide, if I choose.

Week 1 -

As soon as I saw the color combination one thing popped into my mind. Peppers! They're full of beautiful rich reds, greens and oranges. I immedietly knew that was the route I wanted to go. And while I didn’t stick to four ingredients or less I did come up with a delish southwest inspired Stuffed Peppers recipe.


Southwest Stuffed Peppers #Recipe - My #KraftFreshTake

What you need:
  • 1 cup brown rice (or boil-in-the bag if you prefer.)
  • 1 tablespoon olive oil
  • 1 garlic clove, chopped
  • 6 green onions, chopped
  • 1/2 pound  ground beef
  • 2 sweet orange peppers, chopped
  • 2 jalapeno peppers chopped
  • 1 teaspoon ground cumin
  • 4 large bell peppers, halved lengthwise, ribs and seeds removed
  • 1 package Kraft Fresh Takes, Southwest Three Cheese variety

Garnishes – Kraft Sour Cream and Salsa

Directions

Heat oven to 375° F. Cook the rice according to the package directions.

Heat the oil in a large skillet over medium-high heat. Add beef, garlic and half of the green onions, reserving some for serving. Cook about 10 minutes until no longer pink, breaking up beef with spoon.

Stuffed Peppers Filling

Stir in the jalapenos, sweet peppers and cumin. Cook for 3-5 minutes until peppers start to soften; add in cooked rice, ½ cup of the Kraft Fresh Take cheese and entire side of Kraft Fresh Take breadcrumbs.

Arrange the bell peppers, cut-side up, in a 9-by-13-inch baking dish or pan. Divide the beef mixture among the bell peppers, add ½ cup water to the dish, tightly cover the dish with foil, and bake until the bell peppers are soft, 30 to 40 minutes.

Uncover, sprinkle with the remaining cheese, and bake until melted, about 5 minutes.
Serve topped with sour cream, salsa, and remaining green onions.

These look delicious unfortunately I am allergic to bell peppers, you would use the stuffing in a large mushroom though. I wonder how that would taste?
