What you need:
- 6 bone-in chicken thighs
- Medium red potatoes, quartered
- Salt & Pepper to taste
- 1 tsp garlic powder
- 1 tsp parsley flakes
Sauce:
- 1 tablespoon parsley
- 1/2 tsp. basil
- 1/2 tsp. chili powder
- 1/4 tsp. garlic powder
- 1/2 tsp. pepper
- 1/2 cup honey
- 1/4 cup mustard
- 1 envelope ranch salad dressing mix
Directions
Boil potatoes for 10 minutes till softened just slightly. Place in baking dish and toss with olive oil, garlic powder, parsley and salt & pepper. Bake uncovered at 350, for about 45 minutes until tender.
Combine all "sauce" ingredients in a bowl, mix and separate into two small bowls. Place chicken in a baking pan; drizzle with ½ of the honey mustard mixture.
Bake, uncovered at 350 degrees for about 45 minutes or until juices run clear. Top chicken and potatoes with warmed honey mustard reserve and serve.

I love the recipes that aren't too difficult and have most everything in the home. This looks like it turned out great too.
I think I might have to try this but I'm not a fan of thighs so I will probably use chicken breast instead.

Oh this looks really good! I will have to check and see if that ranch mix is gluten free....but I think I could make this gluten free for us! Looks really good!
We don't ever buy thighs, and like Marissa said, I'd probably sub in breasts instead. Looks delicious though!
