Easy Chicken Potpie


Potpie


What you need:

  • 2 cups cubed cooked chicken
  • 4 carrots, sliced
  • 2 red potatoes, peeled, cut and cubed
  • 1/4 cup butter, cubed
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup frozen peas, thawed
  • 3-4green onions, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 9 inch single-crust pie


Directions:


  • Place the carrots, potatoes large water filled saucepan. Bring to a boil. Reduce heat; cook for until vegetables are tender.
  • In a seperate saute pan, melt butter over medium heat and stir in flour creating a rue.
  • Slowly add the broth, and seasonings. Bring to a boil; stir until thinkened
  • In a large bowl combine drained carrots and potatoes, sauce, onions, peas and cooked chicken.
  • Fill your pie with filling or make mini pies by sectioning off your pastry and creating indivitual pie tops. Once your pie(s) are filled and pastry crust has been placed over the top, trim, and seal the edges. 
  • Cut slits in top; bake at 375° for 25-30 minutes or until crust is golden brown.
