Spiced chicken quarters with garlic green beans, is a cheap meal for a busy night.
5 cloves garlic, chopped
1/2 teaspoon salt
1 1/2 teaspoon cajun spice
1/2 teaspoon ground cumin
1 tsp freshly ground black pepper
2 tablespoons olive oil
6 chicken leg quarters
1/2 cup chicken broth
2 gloves garlic, minced
2 tsp extra virgin light olive oil
1/3 cup bread crumbs
2 tsp garlic powder
Preheat oven to 425°.
Combine the salt, pepper, cajun spice, and cumin. Add olive oil and mix well.
Wash chicken leg quarters and pat dry. Make a pocket under the skin of each leg quarter and stuff with a few pieces of chopped garlic; pat the spice mixture over each quarter.
Pour 1/2 cup of chicken broth into the baking dish. Bake for 40 to 50 minutes, or until juices run clear.
If you use frozen beans I like to steam them first, to reduce the excess water. Add olive oil to sauté pan over medium heat. Add garlic and saute for about 2 minutes. Add beans, and garlic powder slowly mixing in bread crumbs until the bread crumbs are moist. Serve.
