Meals On a Budget - Chicken Leg Quarters and Garlic Green Beans #Recipe

Feeding a family of six isn’t always easy, especially with the prices or meat rising at almost the same rate as my boys' appetites! Chicken leg quarters can not only be marinated, slow cooked, baked and grilled, but are easy on the budget.

Spiced chicken quarters with garlic green beans, is a cheap meal for a busy night. 


Budget Meal - Chicken Leg Quaters and Garlic Green Beans


Ingredients:
5 cloves garlic, chopped
1/2 teaspoon salt
1 1/2 teaspoon cajun spice
1/2 teaspoon ground cumin
1 tsp freshly ground black pepper
2 tablespoons olive oil
6 chicken leg quarters
1/2 cup chicken broth

For Beans:
2 gloves garlic, minced
2 tsp extra virgin light olive oil
1/3 cup bread crumbs
2 tsp garlic powder

Directions:
Preheat oven to 425°.
Combine the salt, pepper, cajun spice, and cumin. Add olive oil and mix well. 
Wash chicken leg quarters and pat dry. Make a pocket under the skin of each leg quarter and stuff with a few pieces of chopped garlic; pat the spice mixture over each quarter.
Pour 1/2 cup of chicken broth into the baking dish. Bake for 40 to 50 minutes, or until juices run clear.


Garlic Green Beans
If you use frozen beans I like to steam them first, to reduce the excess water. Add olive oil to sauté pan over medium heat. Add garlic and saute for about 2 minutes. Add beans, and garlic powder slowly mixing in bread crumbs until the bread crumbs are moist. Serve.
