There are many reasons I love the holiday season, but one of my favorite things about the season is baking. All the delicious goodies accompanying our holiday table, I can’t wait! I do know though, how fast the holidays can sneak up on us. And with all the hustle and bustle you can find yourself with limited time to make those special treats. That’s why I want to share with you, not only one of my easy holiday dessert recipes, but an easier frosting option, new Cool Whip Frosting.
Earlier this week I shared with you these fun Slime-Filled Monster Cupcakes I made for my children. It’s been such a somber week; I wanted nothing more than to see them smile. Using Cool Whip frosting added a sweet touch to our monstrous cupcakes unlike any other we’ve tasted - and it certainly brought a smile to their faces. Since it was such a hit, this week I really wanted to try incorporating Cool Whip into one of our favorite holiday treats, Red Velvet Peppermint Cupcakes.
Strapped for time this holiday season? Let a box of Red Velvet cake mix and Cool Whip Frosting cut your time in the kitchen in half – and nobody needs to know your secret.
What you need:
- Chocolate Velvet Cake Batter
- 1 (12-ounce) package white chocolate morsels
- 6 crushed peppermint candy canes
- Cool Whip Frosting – vanilla or cream cheese
Prepare and bake cake mix according to box; spoon batter evenly into paper cups, filling two-thirds full. Remove cupcakes from pan, and let cool completely on wire racks.
Melt white chocolate morsels in a microwave-safe bowl at HIGH for 30-second intervals until melted. Stir until smooth, and spread in a 1/4-inch-thick layer on a wax paper lined baking sheet. Sprinkle evenly with peppermint candy. Chill 30 minutes or until firm. Remove from baking sheet, and crush.
Spread cupcakes evenly with Cool Whip Frosting; sprinkle with chopped candy mixture. Note* for a flavor twist I love the combination of Cool Whip Cream cheese frosting with peppermint. Since half my kids like this and the other half don’t, I spilt my cupcakes, making one batch cream cheese and one batch vanilla frosting.
