Garlic Roasted Chicken with Potatoes & Carrots #Recipe

What you need:
  • 1/4 cup butter
  •  6 chicken legs or thighs *I prefer thighs
  •  6 large Yukon Gold potatoes
  •  1 whole garlic head separated into cloves, unpeeled
  • 1 bag baby carrots
  • ½ yellow onion
  •  salt and ground black pepper to taste


Direction:

Boil potatoes to soften slightly about 10-15 minutes depending on size. Remove from water and cut into quarters; dice onion

Preheat oven to 400 degrees F (200 degrees C) 

Place the butter into a roasting pan, and melt in the oven. When butter is melted, swirl to coat the bottom of the roasting pan, add chicken drumsticks or thighs, potatoes, carrots, onions and unpeeled garlic cloves, into the pan. Sprinkle with salt and black pepper; turn the chicken, potatoes, and garlic to coat with butter. I add a little extra butter on top to keep the potatoes and carrots moist while they bake.

Bake in the preheated oven until the chicken is no longer pink inside and the juices run clear, about 40 minutes, basting occasionally with pan drippings.  Check carrots and potatoes to make sure they are soft as well.

Note* An instant-read thermometer inserted into a thick part of a thigh should read at least 165 degrees F (74 degrees C).

To serve, squeeze garlic from the baked cloves, and mix into your potatoes, carrot mix. Pour pan juices over chicken and potatoes.
