Chili Chicken Breast #Recipe

What You Need:
2 tablespoons Canola Oil
4 Cloves Garlic (Minced)
1 Large Yellow Onion (chopped)
1 bag Frozen Corn
16 ounce can of Roasted Tomatoes
2 cans Kidney Beans (drained and rinsed)
1 can Black Beans (drained and rinsed)
1 cup Beer
1 cup Vegetable Stock
1/4 cup Chili Powder
3 tablespoons Ground Cumin
½ teaspoon basil
2 tablespoons Oregano
1 can Chipotle Pepper with tomato
4 Boneless Skinless Chicken Breasts



Directions:
In a large pot, heat the oil over medium high heat. Add onions, garlic, and sauté until translucent.  Add the chicken. Next add in your corn, tomatoes (with juice) chipotle peppers and simmer for 5-10 minutes. Add some salt and pepper as desired, additional spices and your beans - drained and rinsed. Pour in beer and vegetable stock forming a “soup.” Bring to a boil, reducing to a simmer for about 30-60 minutes – stirring occasionally. Serve over white rice.       * Note, as the chicken cooks and becomes soft, I break it up a bit in the pot using my spoon

This also makes for an incredible crock pot dish simmered on medium for 3 hours.
