Fast Fazool #Recipe

Despite my gripes, I actually enjoy cooking and love sharing recipes that I find easy, convenient and delicious. However, there are nights I am absolutely lost in the kitchen feeling as if I need fromAtoB.co.uk to show me around. I guess I was just in a funk last night and completely ruined dinner. With 5 hungry mouths to feed I knew I had to find something else quick (or at least easy) yet fulfilling, to whip up. Since all my meat was frozen I had to rummage through the cabinets real quick, and it wasn''t looking promising. A few cans of beans, some pasta, sauce, broth.... Well, OK, pasta was an option! And then I realized I only had a single can of diced tomato's....sigh

When all else fails I put in what I have on hand and let the internet do the rest. The closest match was Pasta Fozool. Although I didn't have everything I needed, I figured I could come up with something similar and still call it Fozool, right? lol

So if your ever in a pinch try my easy Fazool!

Pasta Fazool Recipe

What you need:

  • 1 (14 ounce) can diced tomatoes
  • 32 oz chicken broth
  • 1 cup water
  • 1 cup cook ditalini
  • 1  can kidney beans
  • 1 cans cannellini beans
  • half a bag, shredded carrots - If you have the time you can chop your own
  • 2 celery ribs, diced
  • 1 tbs parsley
  • 1 tsp  basil
  • 3 garlic cloves, minced
  • 1  onions, chopped
  • 2 tablespoons olive oil
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon black pepper
  • Half a cup chopped deli ham
  •  Parmesan cheese

Heat olive oil in large pot, saute the garlic, carrots, onions and celery for about 5 minutes. While, sauteing cook your Ditalini in a seperate pot, so it doesn't suck up all the juices in your main dish. Add tomato's, beans, ham, broth and water, simmering over a medium heat for about 15/20 minutes. Add your cup of cooked pasta and simmer and for an additional 10 minutes. Sprinkle with Parmesan and serve.

To tighten this recipe up a bit, you can simmer for about an hour for a more tender bean. For my second attempt at dinner for the night a half hour was good enough for us.
