What you need:
1/2 cup butter
3 garlic cloves mince
1/4 cup soy sauce
6 boneless chicken thighs (with skin)
Preheat the oven broiler on high setting. Lightly grease a baking pan.
In a microwave safe bowl, mix the butter, garlic & soy sauce. Cook 1.5 minutes on high in the microwave until butter is melted.
Arrange chicken in baking dish ,coat with the butter mixture and sprinkle tops with pepper and dried parsley.
Broil chicken 15 minutes, turn chicken, sprinkle top with pepper and parsley and broil an additional 15 minutes, or until juices run clear. You can also bake this dish, but my husband likes his skin crispy so this option works best for us.
I serve with garlic mashed potatoes and green beans
