Buffalo Chicken Casserole

I'm a huge fan of hot sauce, so when I came across this recipe on How Sweet It Is I just had to try it!


Buffalo Chicken Casserole!


What you need:


1 pound pasta
1 lbs Boneless, skinless chicken breast chopped and cooked
1 tsp butter
1 tsp flour
1 1/2 cups milk
3/4 a brick of  grated Monterrey Jack cheese
3/4 of a brick grated
3/4 Sharp Cheddar cheese

1/3 cups Franks wing sauce
1/3 cup Panko Bread Crumbs
1 tsp salt & peeper
3/4 cup chopped green onion
1/4 cup cilantro




Directions:
Boil Pasta. While Pasta is cooking in a saucepan over medium heat  add butter until bubbly, then whisk in flour. Mix together to create a roux, until golden in color; add milk. Continue to cook over a low heat until the milk thickens. Add grated cheeses leaving some for the topping. Once the cheese is melted add in Franks wing sauce, cooked chicken and add salt & pepper to taste.






In a large greased casserole dish add cooked pasta and blend with cheese mixture - making sure it is thoroughly mixed.  Over the top sprinkle additional cheese mix ( I used slices of cheese instead of grated for the topping) a little wing sauce and breadcrumbs; bake at  375 degrees for 25 minutes

My daughter and hubby love buffalo chicken and Franks is a staple in our house. Already have all the ingredients except for the Panko crumbs. Looks like a delish dish. Love casseroles for leftovers too!
