I
love to cook when I am inspired. However, sometimes it’s hard to find that
inspiration. I like to search the web, packages, and cookbooks, for fun recipes that
I think my family will enjoy. Usually when I’m cooking something for the first
time, I really enjoy being in the kitchen and seeing how that recipe will turn
out. This week thanks to Publix and their "Best Meals Happen at Home"
event I got stop by and save big on some of your favorite products. More savings means more items in my cart and
more recipes I can try!
This
event also feature some great General Mills items so I can make my kids their
new favorite snack “homemade” pizza rolls. I just take Pillsbury crescent rolls and roll them up with shredded chicken or pepperoni, a chunk of mozzarella, a
tsp of pasta sauce, and bake at 375 for 8-10 minutes.
Looking
to add a main course to the table this week? Well stock up at the Publix "Best
Meals Happen at Home" at try some Lemon Pepper Fish Taco’s tonight. To
make this taco’s you will use Progresso ® Lemon Pepper Crispy Bread Crumbs and
Old El Paso® Flour Tortillas – 2 items featured in the Best Meals Happen at
Home savings event!

time: 20 Min
Start
to Finish: 20 Min
Makes:
5 servings (2 tacos each)
Ingredients:
Fish
1
egg
1 tablespoon water
1
cup Progresso® Lemon Pepper Panko Crispy Bread Crumbs
1
lb white fish fillets (such as tilapia or catfish)
2
tablespoons vegetable oil
Tacos
10
Old El Paso® Flour Tortillas for soft tacos & fajitas (6 inch; from 8.2-oz
package)
1
medium avocado, pitted, peeled, and chopped
1
medium tomato, seeded, diced
2 teaspoons lemon juice
2
tablespoons chopped fresh cilantro
1
small jalapeño chile, seeded, finely chopped, if desired
2
cups shredded lettuce
1
small lemon, cut into wedges
Directions:
In
shallow dish, place flour. In another shallow dish, beat egg and water. In
another shallow dish, place bread crumbs. Coat fish with flour. Dip into egg
mixture; coat well with bread crumbs.
In
12-inch nonstick skillet, heat oil over medium heat. Add fish; cook 6 to 8
minutes, turning once, until fish flakes easily with fork. Cut into 30
bite-size pieces.
Meanwhile,
heat tortillas as directed on package. In medium bowl, mix avocado, tomato and
lemon juice. Stir in cilantro and jalapeño chile.
Fill
tortillas with fish, avocado mixture and lettuce. Serve with lemon wedges.
Oven
Method Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with
cooking spray. Follow step 1 above. Place fish in baking dish; drizzle with 2
tablespoons melted butter. Bake uncovered 15 to 20 minutes or until fish flakes
easily with fork. Continue as directed in recipe.

Balsamic and Parmesan Roasted Cauliflower Recipe
Prep Time: 10 mins
Cook Time: 30 mins
Total Time: 40 mins
Ingredients
• 1 head(s) cauliflower (large, approx. 3 lbs.)
• 5 tablespoons olive oil
• 3 teaspoons marjoram, dried
• 1 tsp. Mrs. Dash lemon pepper
• 5 tablespoons balsamic vinegar
• ½ to 1 cup Parmesan cheese
Preparation
1. Preheat oven to 450°F.
2. Mix oil, marjoram, and pepper. Add cut up cauliflower to mixture. Toss. Roast on a large rimmed baking sheet until starting to soften and brown on the bottom, 15 to 20 minutes. (I add just a little olive oil to bottom of baking sheet.
3. Toss the cauliflower with vinegar and sprinkle with cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5 to 10 minutes more.
