Chicken Cacciatore #Recipe


Cacciatore Recipe

What you need:

5 boneless, skinless cutlets
2/3 cup all purpose flour
3 tablespoons olive oil
Salt and Pepper, to taste
 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
¼ cup chicken broth
1 ( 28-ounce) can diced tomatoes with juice

Directions:
Sprinkle the chicken pieces with salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
In a large saute pan, heat the oil over a medium heat.  Add the chicken and saute until just browned. Remove chicken transferring to a plate, set aside. Add the bell pepper, onion and garlic to the sauté pan. Cook over medium heat until the onion is tender, about 5 minutes. Season with S&P. Add the wine and simmer until reduced by half. Add diced tomatoes with the juice, broth and return the chicken breasts to the pan, turning to coat with sauce. Bring the sauce to a simmer. Continue simmering over medium heat until the chicken is cooked through - about 25 minutes depending on thickness.
