Hot Cajun Chicken & Rice #Recipe




Cajun Chicken and Rice Recipe


What You Need:
  • 1lbs chicken breast
  • Dry Cajun seasoning
  • 2 tsp olive oil
  • 3 garlic cloves, chopped
  • 1 chopped yellow onion
  • 2 green bell pepper, diced
  • 1/3 cup tablespoons tomato paste * or one of the small size cans
  • About 4 cups precooked brown rice or 4 bags of brown boil in the bag
  • Tabasco sauce



Directions:

Sprinkle Cajun seasoning on chicken and bake at 375 degrees until it is no longer pink inside and any juice runs clear. Add oil to skillet; saute garlic, onion, bell pepper and tomato paste for 3 minutes. Add rice and saute for 5 more minutes adding Tabasco to taste.

It's not a crispy chicken it's more like a grilled chicken texture. In fact grilling chicken breast with the cajun seasoning would also work well with this dish.
