Pumpkin Spice Bars with Cream Cheese Frosting


I love the fall for one thing, Pumpkin! Pumpkin Pie, Pumpkin bread, Pumpkin cookies - If it starts with the word Pumpkin I'll probably love it! When I did my Gold Medal review I came across a great recipe for Pumpkin-Spice Bars, that I had to try! And let me tell you they lived up to all my expectations ;-)

What you need:
4 eggs
1 cup vegetable oil
2 cups granulated sugar
1 can of Pumpkin ( not pumpkin pie mix!)
2 Cups Gold Medal White whole wheat flour
2 Teaspoons baking powder
2 teaspoons cinnamon
1teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves



Frosting:
1 package cream cheese, softened
1/3 cup butter, softened
1 teaspoon vanilla
2 cups powdered sugar

Directions:
Pre-heat oven to 350. Grease a 15 by 10 pan with shortening. In a large bowl, beat eggs, sugar oil and pumpkin on medium speed until smooth. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Spread in pan and bake 25 - 30 minutes until golden brown. Cool completely

In medium bowl, beat cream cheese, butter and vanilla on low until smooth. Gradually beat in powdered sugar, 1 cup at a time until smooth. Frost cooled and cut into bars. Store covered and refrigerated.

This sounds very good. I'm just not so sure i know what a can of pumpkin is because all i remember seeing is cans of pumpkin pie mix. Anyways im going to look for a can of pumpkin at the store & if i can find it im making this. Thanks for sharing!
