What you need:
1 bag of Idaho potatoes/baking potates ( makes about 14 potatoes)
1 garlic bulb
1 stick of butter
3/4 cup milk
1 3/4 cup shredded cheddar cheese
salt and pepper to taste
1/2 cup bacon bits *optional*
Clean Potatoes and bake at 400 for about an hour or until tender. While potatoes are baking peel the first layer of skin off your garlic clove, without separating the skin on the cloves or the cloves from each other. Cut off the top of the garlic bulb, lightly coat with olive oil, wrap in tin foil and bake for about 45 minutes until soft.
Remove and cool potatoes and garlic. When cool, cut the potatoes in half lengthwise and remove insides into separate bowl. Place "shell's" to the side for later use.
Squeeze the soften garlic out of the skin through cut top into the bowl, with potatoes, mix in milk, softened butter and salt and pepper to taste. I beat this together until butter is no longer visible.
Scoop mixture back into potatoes shells, sprinkle on cheddar cheese and optional bacon bit. *bacon bits can also be mixed into potatoe mixture* Place on a baking sheet and bake until heated through and cheese has melted about 20 minutes give or take.
These are one of the only sides the everyone at the table will eat in my house. My grandmother always made these minus the garlic. We are huge garlic lovers so I added my mashed potato recipe to her twiced baked.
